Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather a large mixing bowl, spatula, and greased 13 x 9-inch pan.
  2. In the mixing bowl, combine almond flour, Orgain Organic Vanilla Protein Powder, Lakanto Monkfruit Sweetener, and melted coconut oil. Mix until crumbly.
  3. Transfer the crust mixture to the greased pan and press down evenly across the bottom.
  4. Bake the crust for 10-12 minutes until golden brown and slightly firm. Set aside to cool.
  5. Combine reduced-fat cream cheese, Greek yogurt, Lakanto Monkfruit Sweetener, lemon zest, lemon juice, vanilla, and protein powder in a clean mixing bowl. Blend until smooth.
  6. Spread the creamy lemon filling evenly over the cooled crust using a spatula.
  7. Return the pan to the oven and bake filling for 15-18 minutes until edges are set but center jiggles slightly.
  8. Remove from oven and cool on a wire rack. Refrigerate for at least 2 hours before slicing.
