Step-by-Step Instructions for Cod Piccata
  1. Rinse the cod fillets under cold water and pat them dry with paper towels. Dredge in almond flour seasoned with salt.
  2. In a skillet, heat olive oil and grapeseed oil over medium-high heat for about 2 minutes until shimmering.
  3. Place the dredged cod fillets in the skillet, cooking for 2-3 minutes on each side until golden brown. Keep warm.
  4. In the same skillet, add chicken stock, lemon juice, and capers, scraping up browned bits. Simmer for 3-4 minutes.
  5. Continue simmering the sauce until reduced by half, about 2-3 minutes. Adjust salt if needed.
  6. Serve the cod fillets with the lemon-caper sauce drizzled on top and garnish with parsley.
