  • 1 pound shrimp peeled and deveined
  • 1 tablespoon chipotle sauce adjust to taste
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon olive oil
Toppings
  • 1 cup cooked rice white or brown
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 avocado sliced
  • 1 cup cilantro chopped

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine shrimp, chipotle sauce, lime juice, and olive oil.

  4. While shrimp is baking, prepare rice and heat black beans and corn.
