  • 2 tablespoons Lime Juice Can replace with lemon juice
For Seasoning
  • 2 tablespoons Cajun Spice Adjust for desired heat
  • 1 teaspoon Smoked Paprika Can replace with regular paprika
  • 1 teaspoon Onion Powder Fresh onion can be substituted
  • 1 teaspoon Garlic Powder Use fresh minced garlic if preferred
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
For Garnish
  • 1/4 cup Cilantro Fresh herb; optional
  • 1/2 cup Feta or Cotija Cheese Can substitute with grated parmesan

  • 1 teaspoon Chipotle or Chili Powder Adjust according to spice preference

Preparation Steps
  1. Preheat the oven to 425°F (220°C) and gather large sheets of aluminum foil.
  2. Combine olive oil with half of each Cajun spice and smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl, creating a flavorful paste.
  3. Husk and rinse the corn under cold water, then brush the oil and spice mixture over each corn cob.
  4. Wrap each ear tightly in aluminum foil and place on the oven rack.
  5. Bake for 30 minutes; unwrap and check tenderness. Bake for 20-25 more minutes if softer corn is desired.
  6. Whisk together mayonnaise, sour cream, remaining Cajun spices, lime juice, salt, and pepper in a bowl until smooth.
  7. Carefully unwrap baked corn and brush with the creamy sauce before serving.
  8. Garnish with crumbled feta or Cotija cheese and fresh cilantro.
