Ingredients
  

For the Base
  • 1 Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 each Bell Pepper any color, diced
  • 1 cup Corn canned or frozen
For the Protein
  • 1 can Black Beans drained and rinsed
For Creaminess
  • 1 each Avocado diced
For Sharpness
  • 1 each Red Onion sliced
  • 0.5 cup Cilantro chopped
For Flavoring
  • 2 tbsp Lime Juice freshly squeezed
  • 2 tbsp Olive Oil or avocado oil
  • 1 tsp Chili Powder to taste
  • 1 tsp Salt
  • 1 tsp Pepper freshly ground
For Topping
  • 0.5 cup Shredded Cheese cheddar or Mexican blend

Method
 

Preparation Steps
  1. Wash and prepare all vegetables under cold water and pat dry.
  2. Chop the romaine lettuce, halved cherry tomatoes, diced cucumber and bell pepper, and set aside in a large bowl.
  3. Rinse and drain black beans in a colander.
  4. Combine chopped vegetables, black beans, corn, diced avocado, sliced red onion, and chopped cilantro in a large bowl and toss gently.
  5. In a separate bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper until blended.
  6. Pour the dressing over the salad mixture and toss gently to coat.
  7. Sprinkle shredded cheese on top before serving.
