  • 1/2 cup Caster or Granulated Sugar Granulated sugar can be substituted with coconut sugar
  • 2 tablespoons Cornstarch or Cornflour Can be replaced with arrowroot starch if desired
  • 2 tablespoons Lemon Juice Fresh lemon juice is preferred
For the Glaze
  • 1 cup Icing Sugar Powdered sugar can be used if icing sugar is unavailable

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare two baking trays with grease-proof paper.
  2. Roll out the puff pastry until about 1/8 inch thick and cut out ghost shapes.
  3. Chill the cut-out shapes in the refrigerator for about 5 minutes.
  4. In a medium saucepan, combine blueberries, sugar, cornstarch, and lemon juice. Cook until thickened.
  5. Assemble the hand pies by placing blueberry filling on the pastry and sealing with another cut-out.
  6. Crimp the edges with a fork to seal the filling inside.
  7. Brush with dairy-free milk and sprinkle with sugar, then bake for 15-18 minutes.
  8. After baking, cool the hand pies on a wire rack for about 10 minutes.
  9. Mix icing sugar with lemon juice for the glaze and drizzle over the cooled hand pies.
