- Preheat your oven to 180°C (350°F) and prepare two baking trays with grease-proof paper.
- Roll out the puff pastry until about 1/8 inch thick and cut out ghost shapes.
- Chill the cut-out shapes in the refrigerator for about 5 minutes.
- In a medium saucepan, combine blueberries, sugar, cornstarch, and lemon juice. Cook until thickened.
- Assemble the hand pies by placing blueberry filling on the pastry and sealing with another cut-out.
- Crimp the edges with a fork to seal the filling inside.
- Brush with dairy-free milk and sprinkle with sugar, then bake for 15-18 minutes.
- After baking, cool the hand pies on a wire rack for about 10 minutes.
- Mix icing sugar with lemon juice for the glaze and drizzle over the cooled hand pies.
