  • 1 tablespoon Italian seasoning can substitute with homemade mix
  • 1 can diced tomatoes undrained
  • 1 cup tomato sauce opt for low-sodium varieties
  • 2 cups cooked rice brown rice or quinoa as alternatives
  • 1-2 cups shredded mozzarella cheese or dairy-free cheese
  • optional fresh parsley for garnish

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat until it shimmers.
  2. Add 1 pound of ground beef to the skillet and cook for 5–7 minutes until browned.
  3. Stir in 1 chopped onion and 2-3 diced bell peppers along with 2 minced garlic cloves; sauté for 5–7 minutes.
  4. Sprinkle in salt, black pepper, and 1 tablespoon of Italian seasoning; stir well and cook for an additional minute.
  5. Pour in 1 can of diced tomatoes and 1 cup of tomato sauce; cook for 2–3 minutes until heated.
  6. Reduce heat to low and simmer uncovered for about 10 minutes to thicken the sauce.
  7. Fold in 2 cups of cooked rice and heat through for about 5 minutes.
  8. Top with 1-2 cups of shredded mozzarella cheese and cover to melt for 2–3 minutes.
  9. Garnish with fresh parsley and serve warm.
