Ingredients
  

Crust
  • 1 cup Unsalted Butter at room temperature
  • 1/4 cup White Granulated Sugar
  • 1 cup All-Purpose Flour sifted
  • 1/4 teaspoon Salt omit if using salted butter
Filling
  • 3 large Eggs room temperature
  • 1 cup Passion Fruit Purée avoid juice
  • 1 1/2 cups Powdered Sugar optional topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking dish.
  2. Cream together unsalted butter and white granulated sugar until pale and fluffy.
  3. Add sifted all-purpose flour and salt, mixing until crumbly.
  4. Press the dough into the baking dish and bake for 12-15 minutes.
  5. Whisk together eggs and passion fruit purée; add sugar and flour until smooth.
  6. Pour the filling over the crust and bake for 25-35 minutes until set.
  7. Cool for 1 hour, then refrigerate for at least 1 hour before slicing.
  8. Slice into squares and serve with optional powdered sugar.
