Ingredients

For the Filling
  • 1 lb Lean Ground Beef Ground chicken or turkey can serve as alternatives.
  • 2 tbsp Soy Sauce Tamari works well for a gluten-free option.
  • 1 tbsp Hoisin Sauce Plum sauce makes a great substitute.
  • 1 cup Shredded Carrots Zucchini or cucumber can be swapped.
  • 1 cup Chopped Bell Peppers Any sweet pepper variety is suitable.
  • 1 cup Fresh Basil Leaves Cilantro or mint can be used if needed.
For Assembly
  • 8 pieces Rice Paper Wrappers Opt for large sizes to simplify filling.

Equipment

  • skillet
  • large shallow dish

Method

Cooking Instructions
  1. In a skillet over medium heat, add the lean ground beef and cook for about 5–7 minutes, stirring occasionally until it’s well-browned and cooked through. Incorporate soy sauce and hoisin sauce.
  2. Next, toss in the shredded carrots and chopped bell peppers into the skillet. Stir-fry for about 2 minutes until tender but still crisp.
  3. Fill a large shallow dish with warm water and dip one rice paper wrapper in for a few seconds until it’s pliable. Let excess water drip off.
  4. Lay the softened rice paper wrapper on a clean surface. Place 2-3 fresh basil leaves in the center, then a spoonful of the beef mixture.
  5. Fold the sides of the wrapper over the filling, then tuck the bottom edge up and roll tightly away from you.
  6. Once all the rolls are assembled, serve them immediately with a dipping sauce like sweet chili or peanut sauce.
