  • 2 tablespoons Lime Juice Lemon juice is also a good alternative.
  • 2 cups Tortilla Chips Broken corn tortillas or crunchy croutons work well.

Method
 

Steps
  1. In a small bowl, whisk together ranch dressing and taco seasoning until smooth. Cover and refrigerate for at least 15 minutes.
  2. Heat a skillet over medium-high heat. Season chicken with salt, pepper, and taco seasoning. Cook for about 12 minutes, flipping halfway, until golden brown and cooked through. Allow to cool slightly before chopping into bite-sized pieces.
  3. In a large bowl, combine romaine, tomatoes, corn, green onions, black beans, cheddar cheese, and cilantro. Toss gently to mix.
  4. Add the chopped chicken and drizzle with ranch dressing. Toss gently to coat and serve immediately.
