Step-by-Step Instructions
  1. Rinse the rice in cold water until clear. Combine rice, broth, and a pinch of salt in a pot. Boil, then cover and simmer for 18-20 minutes.
  2. Heat olive oil in a skillet. Brown ground meat for 5-7 minutes until no longer pink. Remove and let rest.
  3. In a small pot, warm black beans with cumin and garlic, adding a splash of water for flavor. Cook for 5-7 minutes.
  4. Sauté diced onions and bell peppers in the skillet until soft and caramelized (5-8 minutes).
  5. Combine rice, vegetables, meat, and beans in the skillet. Cook for another 2-3 minutes.
  6. Layer the rice mixture in bowls, topping with lettuce, tomatoes, cheese, corn, and other preferred toppings.
  7. Finish with lime juice and cilantro. Serve hot.
