Preparation Steps
  1. Toast the almonds in a dry skillet over medium heat for about 4 minutes until golden brown.
  2. Prep the ingredients by mincing the garlic, slicing the shallot and red onion, and dicing one strawberry for the dressing.
  3. Make the dressing by combining olive oil, cider vinegar, mustard, garlic, shallot, diced strawberry, honey, and salt in a jar or blender and blend until emulsified.
  4. Rinse and dry the romaine and spinach, tearing the romaine into bite-sized pieces and combining them in a large bowl.
  5. Assemble the salad by dividing the greens into bowls and topping with feta, sliced strawberries, red onion, and toasted almonds.
  6. Drizzle the vinaigrette over the salad just before serving or serve it on the side.
