- In a large mixing bowl, combine the strawberry cake mix, melted butter, and egg. Stir until smooth and well-blended.
- Cover the bowl with plastic wrap and place it in the refrigerator. Chill the dough for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Remove the dough and roll it into balls, roughly 1 inch in diameter. Optionally roll each ball in powdered sugar or pink granulated sugar.
- Bake the cookies in your preheated oven for 8–10 minutes until edges are set and centers look slightly soft.
- Press a chocolate kiss into the center of each cookie while warm. Cool on a wire rack.
