Step-by-Step Instructions
  1. Prep the Slow Cooker: Lightly spray the inside with cooking spray or rub with oil to prevent sticking.
  2. Add Chicken and Vegetables: Place chicken at the bottom of the crockpot and top with chopped red bell pepper and onion.
  3. Make the Sauce: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic powder, ginger, vinegar, and black pepper. Pour over chicken and vegetables.
  4. Cook: Cover and cook on LOW for 4-6 hours or HIGH for 2.5-4 hours until chicken is tender.
  5. Thicken the Sauce: About 30 minutes before serving, mix cornstarch with cold water and stir into the crockpot. If using, add butter now.
  6. Serve: Spoon chicken and sauce over warm rice and enjoy.
