- Prepare the Chocolate Shell: Melt white chocolate chips in a microwave-safe bowl at 50% power, stirring every 30 seconds until smooth. Coat the inside of Easter egg molds with the melted chocolate and refrigerate for 15-20 minutes until set.
- Make the Filling: Whip the heavy cream until soft peaks form, about 3-5 minutes. Fold in the pureed strawberries and vanilla extract.
- Assemble the Eggs: Remove hardened chocolate shells from molds and fill each half with strawberry cream mixture. Sprinkle shortcake crumbs on top.
- Seal the Eggs: Melt more white chocolate to adhere the halves together, sealing in the filling, and chill for 20-30 minutes.
- Remove and Serve: Gently remove from molds, run a warm knife along edges if needed, and serve on a platter.
