  • 1 cup Granulated Sugar Can substitute with brown sugar
  • 1/2 cup Half and Half Milk or dairy alternative can replace it
  • 1/2 cup Salted Butter Unsalted butter can be used with a pinch of salt
  • 1 cup Chopped Strawberries Frozen and well-thawed strawberries work
  • 1/2 cup White Chocolate Chips Dark chocolate chips are a good alternative
  • optional Coarse Raw Cane Sugar Adds crunch on top of the cookies
For the Glaze
  • 1 cup Powdered Sugar
  • 1/4 cup Half and Half Use milk or cream as alternatives if preferred

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line two cookie sheets with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose baking mix and granulated sugar until there are no lumps.
  3. Add the half and half and melted salted butter to the dry mixture, stirring gently to form a soft dough.
  4. Carefully fold in the chopped strawberries and white chocolate chips with a spatula.
  5. Using a medium cookie scoop, drop dough onto prepared cookie sheets, spacing them about 2 inches apart.
  6. If desired, sprinkle a little coarse raw cane sugar on each cookie before baking.
  7. Bake the cookies for 8 to 10 minutes until the edges are set and the tops are lightly golden.
  8. Allow the cookies to cool on the sheets for 5 minutes, then transfer to a cooling rack.
  9. Prepare the glaze by mixing powdered sugar and half and half until smooth.
  10. Once cooled, drizzle the sweet glaze over each cookie and serve.
