  • 2 cups All-Purpose Flour or gluten-free flour
  • 2 teaspoons Baking Powder ensure it's fresh
  • 1 teaspoon Salt regular table salt
  • 1 cup Unsalted Butter or margarine/oil
  • 1 cup Granulated Sugar or brown sugar for deeper flavor
  • 3 large Eggs or flax egg for egg-free
  • 1 teaspoon Vanilla Extract or almond extract
For the Custard
  • 2 cups Whole Milk or almond/soy milk
  • ½ cup Sugar (for Custard) fine sugar recommended
  • 2 tablespoons Cornstarch for thickening
  • 4 large Egg Yolks or chia seeds as vegan substitute
For the Topping
  • 2 cups Fresh Strawberries can use frozen if well-drained

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Beat the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Combine wet and dry ingredients, alternating with whole milk.
  6. Divide batter between the prepared pans and bake for 25-30 minutes.
  7. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks.
  8. For the custard, heat milk in a saucepan. Whisk together sugar, cornstarch, and egg yolks in another bowl.
  9. Gradually add heated milk to the egg mixture, thro-whisking until thick.
  10. Slice each cake in half horizontally, creating four layers.
  11. Assemble the cake layers with custard and fresh strawberries.
  12. Chill the assembled cake for at least an hour before serving.
  13. Optionally garnish with fresh strawberries before serving.
