  3. Divide the dough into 8 equal pieces and shape them into balls. On a lightly floured surface, flatten each ball into a circle about 4-5 inches wide. Place a spoonful of the meat mixture in the center, followed by cheese, onions, tomatoes, cilantro, and jalapeños.
  4. Fold over each dough circle to encase the filling, forming a half-moon. Use a fork to press down on the edges to seal, ensuring no filling leaks out during frying. Place sealed pockets on a floured surface while preparing the oil.
