Ingredients
  

For the Batter
  • 2 large Eggs
  • 1 cup Brown Sugar
  • 1/2 cup Oil Canola or vegetable oil
  • 1/4 cup Honey Can replace with maple syrup
  • 1 teaspoon Vanilla Extract
  • 1 cup Carrots Grated
  • 1 cup Zucchini Grated, excess water squeezed out
  • 1/2 cup Walnuts Optional, can substitute with pecans
  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Ground Ginger Can swap for cinnamon
For the Lemon Cream Cheese Frosting
  • 8 oz Cream Cheese Room temperature
  • 2 cups Powdered Sugar
  • 1 tablespoon Fresh Lemon Zest
  • 2 tablespoons Lemon Juice

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a greased 13x9-inch baking pan.
  2. In a large mixing bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla extract until well combined.
  3. Gently fold in the grated carrots, zucchini, and optional walnuts.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and ground ginger.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spread the batter evenly into the greased baking pan and bake for about 25 minutes.
  7. Allow the bars to cool completely on a wire rack.
  8. In a mixing bowl, beat the room temperature cream cheese, powdered sugar, fresh lemon zest, and lemon juice until fluffy.
  9. Spread the lemon cream cheese frosting over the cooled bars, then slice and serve.
