Method
 

Baking Instructions
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.
  3. In a large bowl, beat butter, granulated sugar and brown sugar until light and fluffy (2-3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in diced apples gently.
  7. Scoop approximately 1.5 tablespoons of dough for each cookie onto a tray. Refrigerate for 20-30 minutes.
  8. In a small bowl, mix granulated sugar, cinnamon, and nutmeg for coating.
  9. Roll each chilled dough ball in the cinnamon sugar mixture until coated.
  10. Bake cookies on prepared sheet for 8-10 minutes until edges are set and centers are slightly soft.
  11. Let cookies cool on baking sheet for 2-3 minutes before transferring to a wire rack.
