- Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with nonstick spray.
- Season the chicken breasts with salt and black pepper on both sides. Sear them in a large skillet over medium-high heat for about 5 minutes per side until golden brown.
- Add chopped onion and minced garlic to the skillet and sauté for about 3 minutes until translucent.
- In a medium bowl, combine the cream of mushroom soup, low-sodium chicken broth, soy sauce, paprika, and thyme. Whisk until well blended.
- Arrange the seared chicken breasts in the prepared baking dish and pour the sauce mixture evenly over them.
- Cover with aluminum foil and bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Let cool for a few minutes, then serve over cooked rice with sauce drizzled on top.
