Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with nonstick spray.
  2. Season the chicken breasts with salt and black pepper on both sides. Sear them in a large skillet over medium-high heat for about 5 minutes per side until golden brown.
  3. Add chopped onion and minced garlic to the skillet and sauté for about 3 minutes until translucent.
  4. In a medium bowl, combine the cream of mushroom soup, low-sodium chicken broth, soy sauce, paprika, and thyme. Whisk until well blended.
  5. Arrange the seared chicken breasts in the prepared baking dish and pour the sauce mixture evenly over them.
  6. Cover with aluminum foil and bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Let cool for a few minutes, then serve over cooked rice with sauce drizzled on top.
