Step-by-Step Instructions for Smoked Pickled Jalapenos
  1. Preheat your smoker to 250°F. Rinse the jalapenos under cold water.
  2. Place the washed jalapenos on the smoker grates for 30 minutes.
  3. Slice the smoked jalapenos into thin rings.
  4. Combine water, salt, vinegar, sugar, bay leaf, oregano, and thyme in a pot and bring to boil.
  5. Transfer sliced jalapenos into a mason jar and pour hot brine over them.
  6. Allow the jar to cool, then refrigerate for at least eight hours.
