- In a mixing bowl, whisk together the olive oil, fresh lemon juice, minced garlic, ground cumin, ground coriander, smoked paprika, turmeric, cinnamon, salt, black pepper, and optional cayenne pepper until well blended.
- Slice the onion into rings and layer them at the bottom of your slow cooker.
- Lay the chicken thighs on top of the onion layer in the slow cooker. Pour your prepared marinade over the chicken.
- Cover the slow cooker and set to cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Once cooked, shred the chicken in the slow cooker and mix well with the juices and onions.
