  • 1.5 pounds boneless skinless chicken breast or thighs
  • 2 cups butternut squash peeled and cubed
  • 1 whole red bell pepper sliced
  • 1 whole yellow onion diced
  • 1 cup frozen peas for stirring in
For Serving
  • 1 tablespoon fresh lime juice or lemon juice
  • 4 cups prepared brown rice for serving
  • 0.25 cup chopped fresh cilantro for garnish

Step-by-Step Instructions
  1. In your 6-quart slow cooker, whisk together the light coconut milk, peanut butter, red curry paste, fish sauce, and coconut sugar until smooth.
  2. Add the fresh ginger, minced garlic, and crushed red pepper flakes, mixing thoroughly.
  3. Cut the chicken into bite-sized pieces and add to the slow cooker along with the butternut squash, red bell pepper, and onion. Stir to coat with the sauce.
  4. Cover and cook on high for 2 to 3 hours or low for 5 to 6 hours until the chicken is tender.
  5. About 30 minutes before cooking is complete, stir in the frozen peas and cover again to heat through.
  6. Drizzle with lime juice before serving over brown rice and top with fresh cilantro.
