For the Shrimp
  • 1 pound shrimp, peeled and deveined This is the star of your Shrimp Avocado Mango Bowls!

  • 1 teaspoon chili powder Smoked paprika can give a unique twist too!
  • ½ teaspoon cumin Omit if unavailable or try using curry powder.
  • ½ teaspoon garlic powder Fresh minced garlic provides a bolder taste.
  • salt and black pepper Adjust according to dietary preferences.
For the Salad Mix
  • 2 ripe avocados, diced Ensure they are slightly soft to the touch.
  • 2 ripe mangoes, diced Look for fragrant mangoes.
  • ¼ red onion, finely diced Shallots make a great milder substitute.
  • ¼ cup cilantro, chopped Feel free to omit if herbs aren’t your thing.
  • ½ to 1 jalapeño, seeded and minced (optional) Adjust based on your spice tolerance.
For the Dressing
  • Juice of 2-3 limes lime juice Opt for freshly squeezed for best taste.
  • honey or maple syrup (optional) This adds great depth!

Method
 

Step‑by‑Step Instructions
  1. Cook the rice or quinoa according to package instructions, about 15-20 minutes. Fluff with a fork and set aside to cool.
  2. In a bowl, mix shrimp with chili powder, cumin, garlic powder, salt, and black pepper until evenly coated.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook shrimp for 2-3 minutes per side until pink and opaque.
  4. In a large bowl, combine avocados, mangoes, red onion, cilantro, and jalapeño. Gently toss.
  5. Whisk together remaining olive oil, lime juice, and honey or maple syrup in a small bowl. Season with salt and pepper.
  6. Divide cooked rice or quinoa into bowls. Top with shrimp and salad mix, then drizzle dressing over each bowl.
