  • 8 oz Soba Noodles Use 100% buckwheat for gluten-free
  • 4 cups Cabbage Shredded, can use red or green
  • 2 medium Scallions Sliced
  • 1 medium Chili Pepper Finely chopped
For the Sauce
  • 3 tbsp Chinkiang Black Vinegar Substitute with rice vinegar or lime juice
  • 2 tbsp Tamari Use soy sauce for non-gluten-free
  • 2 tbsp Chili Oil Substitute with sesame oil if desired
  • 3 tbsp Chinese Sesame Paste Peanut butter can be used instead
  • 1 cup Vegetable Broth Use low-sodium
Seasonings
  • 1 tsp Five Spice Powder Or use a pinch of cinnamon and fennel seeds
  • 1 tsp Allspice Just a pinch
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. In a blender, combine the sesame paste, chili oil, vinegar, tamari, garlic, sweetener, five spice powder, allspice, and broth. Blend until smooth.
  2. In a mixing bowl, add the cabbage, chili pepper, and scallions. Drizzle with lime juice, sesame oil, lime zest, and a pinch of salt. Massage gently for 2-3 minutes.
  3. Boil water in a pot. Cook the soba noodles according to package instructions (4-6 minutes), then drain and rinse under cold water.
  4. Whisk lime juice, tamari, and sweetener in a small bowl. Toss the cooled soba noodles with this dressing.
  5. To assemble, place sauce on a plate, add the soba noodles, then top with the cabbage slaw. Optionally add protein and garnish with herbs.
