Step-by-Step Instructions for Korean Chicken Stew
  1. Prepare your ingredients by chopping the onion, mincing the garlic and ginger, and peeling and chopping the carrots and potatoes.
  2. Heat sesame oil in a pot over medium heat. Sauté the onion until soft, then add garlic and ginger.
  3. Add chicken thighs to the pot, browning them on all sides for 5-7 minutes.
  4. Stir in the chopped carrots, potatoes, Korean chili paste, and soy sauce.
  5. Pour in enough water to cover everything. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes.
  6. Check chicken for doneness, adding more soy sauce or Gochujang if necessary. Finish with chopped green onions.
  7. Serve hot in bowls with steamed rice and kimchi on the side.
