Preparation
  1. In a blender, combine the red curry paste, brown sugar, garlic, chopped cilantro, red bell pepper, onion, minced ginger, and red chili. Blend until smooth.
  2. Pour the aromatic paste into the slow cooker with the chicken stock and chicken. Stir to ensure everything is well-integrated.
  3. Cover the slow cooker and set to HIGH for 4 hours or LOW for 8 hours.
  4. Once cooked, remove the chicken, shred it, and return it to the soup. Stir in the coconut milk and rice noodles, cooking for an additional 10-15 minutes.
  5. Add the frozen peas, lime juice, soy sauce, and fish sauce, stirring to combine.
  6. Ladle the soup into bowls, garnishing with cilantro, green onion, red chili, and lime wedges.

Notes
