Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potatoes, rinse in cold water, and drain.
  3. Remove excess moisture by twisting sweet potato shreds in a towel.
  4. In a mixing bowl, combine drained sweet potatoes, onions, eggs, flour, salt, and pepper.
  5. Heat oil in a skillet over medium heat until shimmering.
  6. Scoop portions of the sweet potato mixture into the skillet and flatten slightly.
  7. Cook the hash browns undisturbed for about 3-4 minutes until golden brown.
  8. Flip the hash browns and cook for another 3-4 minutes until evenly browned.
  9. Transfer to a baking sheet and bake for 10-12 minutes for extra crispiness.
  10. Serve hot, optionally topped with sour cream, avocado, or herbs.
