Preparation Steps

- Coarsely grate the sweet potatoes, rinse in cold water, and drain.
- Remove excess moisture by twisting sweet potato shreds in a towel.
- In a mixing bowl, combine drained sweet potatoes, onions, eggs, flour, salt, and pepper.
- Heat oil in a skillet over medium heat until shimmering.
- Scoop portions of the sweet potato mixture into the skillet and flatten slightly.
- Cook the hash browns undisturbed for about 3-4 minutes until golden brown.
- Flip the hash browns and cook for another 3-4 minutes until evenly browned.
