Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Carefully halve the butternut squash lengthwise and scoop out the seeds.
  3. Drizzle the cut sides with olive oil, then sprinkle with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for 40-50 minutes.
  5. Cook diced bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  6. Sauté garlic and spinach in the skillet until spinach wilts, about 3-4 minutes.
  7. Combine cooked bacon, spinach, garlic, and feta in a skillet.
  8. Stuff the cooked butternut squash halves with the filling.
  9. Return stuffed squash to the oven and bake for an additional 15-20 minutes.
  10. Let cool slightly before serving, and garnish with herbs if desired.
