  • 6 oz. cremini mushrooms Button mushrooms can be substituted.
  • 1 medium onion, diced finely Any onion variety works, such as yellow or shallots.
  • 1 Tbsp. fresh thyme, minced Use 1 tsp. dried thyme if fresh isn’t available.
  • 1 Tbsp. dijon mustard Whole grain mustard is a great alternative.
For the Pastry
  • 1 17.3-ounce package frozen puff pastry Ensure it's fully thawed before use.
  • All-purpose flour, for dusting A gluten-free blend can be used if necessary.
For the Finish
  • 1 large egg, separated and beaten Omit for an egg-free version.
  • 1 tsp. sea salt flakes Regular salt can be used.
  • Chopped fresh parsley, for garnish Feel free to skip if you don't have any on hand.
  • Bottled horseradish cream sauce, for serving Sour cream blended with horseradish can work in a pinch.

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat the butter and olive oil over medium-high heat. Sear the beef filet pieces for about 2-3 minutes per side until browned, then remove from heat to cool slightly.
  2. In the same skillet, add the finely chopped cremini mushrooms, diced onion, minced thyme, and Dijon mustard. Cook over medium heat for approximately 8-10 minutes until the mixture appears dry.
  3. Roll out the thawed puff pastry to about ¼ inch thick. Cut into squares and place a dollop of duxelles and a piece of beef on each. Fold to seal securely.
  4. Chill the assembled bites on a parchment-lined baking sheet for up to 24 hours if prepping ahead.
  5. Preheat your oven to 400°F (200°C). Brush each bite with the beaten egg before baking.
  6. Arrange the egg-washed bites on a baking sheet and bake for 20-25 minutes until golden brown.
