- In a large skillet, heat over medium heat and add the ground beef. Cook for about 5-7 minutes, breaking it apart with a wooden spoon until it turns a rich brown color and is no longer pink. Once cooked, drain any excess fat from the pan.
- Stir in soy sauce, brown sugar, and minced garlic into the skillet with the beef. Continue to cook for an additional 2-3 minutes over medium heat, mixing well until the ingredients are fully melted together.
- Prepare rice according to the package instructions. Bring a pot of water to a boil, add the rice, then reduce heat to a simmer, cover and let it cook for about 15-20 minutes.
- In a separate pan, heat a splash of olive oil over medium heat. Add chopped spinach and julienned carrots, sautéing them gently for about 3-4 minutes.
- To assemble your bowl, scoop a generous serving of rice into each bowl. Top the rice with the savory beef mixture and sautéed vegetables. Add sliced cucumbers on the side.
