  • 3 cloves Garlic Minced; fresh is preferred
For the Rice Base
  • 2 cups Rice Cauliflower rice for a low-carb option
For the Vegetables
  • 1 cup Cucumbers Sliced; adds refreshing crunch
  • 1 cup Carrots Julienned; can swap with bell peppers
  • 2 cups Spinach Can substitute with kale or bok choy

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat over medium heat and add the ground beef. Cook for about 5-7 minutes, breaking it apart with a wooden spoon until it turns a rich brown color and is no longer pink. Once cooked, drain any excess fat from the pan.
  2. Stir in soy sauce, brown sugar, and minced garlic into the skillet with the beef. Continue to cook for an additional 2-3 minutes over medium heat, mixing well until the ingredients are fully melted together.
  3. Prepare rice according to the package instructions. Bring a pot of water to a boil, add the rice, then reduce heat to a simmer, cover and let it cook for about 15-20 minutes.
  4. In a separate pan, heat a splash of olive oil over medium heat. Add chopped spinach and julienned carrots, sautéing them gently for about 3-4 minutes.
  5. To assemble your bowl, scoop a generous serving of rice into each bowl. Top the rice with the savory beef mixture and sautéed vegetables. Add sliced cucumbers on the side.
