  • 2 cups Beef Broth vegetable broth can be a lighter substitute
For the Greens
  • 2 cups Fresh Spinach or kale or Swiss chard
For Flavoring
  • 1 teaspoon Italian Seasoning or fresh basil or oregano

Step-by-Step Instructions for Ground Beef Orzo
  1. Gather all ingredients, chop the onion finely and mince the garlic.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion for about 5 minutes until translucent.
  3. Add minced garlic and cook for an additional 1 minute.
  4. Add 1 pound of ground beef, season with salt and pepper, and cook for 6-8 minutes until fully browned.
  5. Stir in the minced garlic again and then add the diced tomatoes. Let it simmer for 2-3 minutes.
  6. Bring the mixture to a boil, reduce to simmer, add orzo and beef broth, then cover and cook for 10-12 minutes.
  7. Once orzo is nearly done, stir in fresh spinach and Italian seasoning until spinach wilts.
  8. Taste and adjust seasoning before serving warm, optionally garnished with grated Parmesan cheese.
