- Start by trimming any excess fat from 1 lb of chicken thighs or breasts. Cut the chicken into bite-sized pieces.
- In a medium-sized mixing bowl, whisk together the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger until fully blended.
- Layer the bite-sized chicken pieces at the bottom of your crockpot.
- Pour the prepared sauce mixture over the chicken in the crockpot, making sure to coat the pieces evenly.
- Layer 2 cups of bell peppers and 2 cups of broccoli over the chicken and sauce.
- Cover the crockpot and set it to cook on low for 4-6 hours or on high for 2-3 hours.
- If you prefer a thicker sauce, carefully remove the chicken and vegetables after cooking and simmer the sauce in a saucepan.
- Gently mix the Chicken and veggies to ensure they are coated with the rich teriyaki sauce. Sprinkle sesame seeds and chopped green onions before serving.
