  • 1 tablespoon Miso Paste optional

  • 2 packs Instant Ramen Noodles discard seasoning packet
  • 2 pieces Soft-Boiled Eggs optional
For the Vegetables
  • 1 cup Shiitake Mushrooms or button mushrooms
  • 2 cups Baby Spinach or kale
  • 3 stalks Green Onions for garnish
For the Aromatics
  • 2 cloves Garlic fresh
  • 1 inch Ginger fresh

  • 1 tablespoon Sesame Oil

  • 2 tablespoons Toasted Sesame Seeds for garnish

Method
 

Step-by-Step Instructions
  1. Season the chicken with salt and pepper. Heat sesame oil in a large pot over medium-high heat, add chicken, and sauté for 5-7 minutes per side until golden brown. Remove chicken and let rest before slicing.
  2. In the same pot, reduce heat to medium, add minced garlic and grated ginger; sauté for 1-2 minutes until fragrant.
  3. Pour in chicken broth, bring to a simmer, stir in soy sauce and miso paste until dissolved. Added noodles, cooking for 3-4 minutes until tender.
  4. Mix in sliced shiitake mushrooms and spinach, cooking for an additional 2 minutes until spinach wilts.
  5. Return sliced chicken to the pot and ladle into bowls, garnish with green onions, soft-boiled eggs, and sesame seeds.
