Step-by-Step Instructions
  1. Marinate the Chicken: Season the chicken thighs with allspice, minced garlic, salt, pepper, and thyme. Let marinate for 30 minutes at room temperature or overnight in the refrigerator.
  2. Sear the Chicken: Heat oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until the skin is crispy and golden, then flip and cook for another 4-5 minutes. Remove from skillet.
  3. Sauté the Aromatics: In the same skillet, add onion, minced garlic, and diced pepper. Sauté for 3-4 minutes until onions are translucent.
  4. Cook the Rice: Stir in rice, then add chicken broth. Bring to a simmer. Nestle seared chicken back in, cover, and reduce heat to low, cooking for 20 minutes.
  5. Finish and Serve: Remove from heat and let rest covered for 5 minutes. Fluff rice with a fork and squeeze lime juice over top. Serve warm.
