Preparation Steps
  1. In a large mixing bowl, combine flour and cold, diced butter. Blend until it resembles coarse crumbs, about 5 minutes.
  2. Press the mixture into a 9-inch pie dish and chill in the refrigerator for 30 minutes.
  3. In a medium saucepan, whisk together egg yolks, brown sugar, honey, and heavy cream. Cook over low heat, stirring constantly for 8-10 minutes.
  4. Once thickened, remove from heat and let cool slightly before pouring into the chilled pie crust.
  5. Preheat the oven to 350°F (175°C) while finishing filling.
  6. Bake the pie for 25-30 minutes, until the edges are set but the center jiggles slightly.
  7. Cool at room temperature for 1 hour, then refrigerate for at least 2 hours. Sprinkle with flaky sea salt before serving.
