- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a mixing bowl, combine 2 cups of chopped broccoli florets and peeled, chopped carrots. Add 2-3 cloves of minced garlic.
- Drizzle 2 tablespoons of avocado oil, 1 tablespoon of honey, 2 tablespoons of low sodium soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of ground ginger over the vegetables. Toss to coat evenly.
- Spread the seasoned veggies evenly on the baking sheet and roast for about 30 minutes, stirring halfway through.
