Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine 2 cups of chopped broccoli florets and peeled, chopped carrots. Add 2-3 cloves of minced garlic.
  3. Drizzle 2 tablespoons of avocado oil, 1 tablespoon of honey, 2 tablespoons of low sodium soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of ground ginger over the vegetables. Toss to coat evenly.
  4. Spread the seasoned veggies evenly on the baking sheet and roast for about 30 minutes, stirring halfway through.
  5. Remove from oven and drizzle with an additional tablespoon of toasted sesame oil, then toss gently.
  6. Transfer to a serving dish and garnish with sesame seeds and chopped parsley, if desired.
