  • 1 cup Bell Peppers mix red, yellow, or green varieties
  • 1/2 cup Red Onion or green onions for milder flavor
  • 1 cup Feta Cheese or mozzarella pearls, optional
  • 1/4 cup Fresh Herbs (Basil/Parsley) any fresh herbs
For the Dressing
  • 1/4 cup Olive Oil or avocado oil
  • 2 tablespoons Vinegar (Red or White Wine) or lemon juice/apple cider vinegar
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper freshly ground, to taste

Cooking Steps
  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add orzo and cook for 7-10 minutes until al dente. Drain and rinse with cool water.
  2. Chop the Vegetables: Dice cherry tomatoes, cucumber, bell peppers, and red onion into small pieces.
  3. Make the Dressing: In a small bowl, whisk together olive oil, vinegar, salt, and pepper until emulsified.
  4. Combine Ingredients: In a large bowl, mix cooked orzo, chopped vegetables, and feta cheese. Add fresh herbs and fold gently.
  5. Dress the Salad: Drizzle dressing over salad and toss to coat evenly.
  6. Serve or Store: Enjoy immediately or chill for 30 minutes before serving.
