- Rinse 1 cup of quinoa under cold water. In a medium pot, combine quinoa and 2 cups of vegetable broth, bring to boil, then simmer on low for 15 minutes.
- In a small mixing bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of maple syrup, 1 tablespoon of Dijon mustard, and 2 tablespoons of apple cider vinegar. Stir in 1 minced garlic clove, allspice, salt, and pepper.
- Transfer the cooked quinoa to a large mixing bowl, add 1 diced apple, 1 cup of chopped celery, 1/4 cup of chopped parsley, and 1/2 cup of candied walnuts. Drizzle vinaigrette over and toss gently.
- Serve immediately or chill in the refrigerator for about 30 minutes to enhance flavors.
