  • 1 cup Quinoa Rinse before cooking
  • 2 cups Vegetable Broth Can use water
  • 1 cup Dried Cranberries Or substitute with raisins
  • 1 medium Apple (Gala, Honeycrisp, or Fuji) Cut into small pieces
  • 1 cup Chopped Celery Can substitute with cucumber
  • 1/4 cup Chopped Fresh Parsley Or use mint or cilantro
  • 1/2 cup Candied Walnuts Plain toasted nuts can be used or omit
For the Vinaigrette
  • 3 tablespoons Olive Oil The base of the vinaigrette
  • 2 tablespoons Maple Syrup Honey can be a substitute
  • 1 tablespoon Dijon Mustard Can substitute with yellow mustard
  • 2 tablespoons Apple Cider Vinegar White wine vinegar can be used
  • 1 clove Minced Garlic Optional for milder taste
  • to taste Allspice Season to taste
  • to taste Salt Season to taste
  • to taste Pepper Season to taste

Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of quinoa under cold water. In a medium pot, combine quinoa and 2 cups of vegetable broth, bring to boil, then simmer on low for 15 minutes.
  2. In a small mixing bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of maple syrup, 1 tablespoon of Dijon mustard, and 2 tablespoons of apple cider vinegar. Stir in 1 minced garlic clove, allspice, salt, and pepper.
  3. Transfer the cooked quinoa to a large mixing bowl, add 1 diced apple, 1 cup of chopped celery, 1/4 cup of chopped parsley, and 1/2 cup of candied walnuts. Drizzle vinaigrette over and toss gently.
  4. Serve immediately or chill in the refrigerator for about 30 minutes to enhance flavors.

Notes
