  • 1 cup Granulated Sugar reduce by 2-3 tablespoons for less sweetness
  • 1 large Egg binding agent
  • 1 teaspoon Vanilla Extract
  • 2 ¾ cups All-Purpose Flour use gluten-free blend for adaptation
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
For the Topping
  • 1 can Canned Pineapple Rings well-drained and patted dry
  • 2 tablespoons Additional Sugar for Sprinkling

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until fully combined, until the batter is smooth and thickened.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate this into the wet ingredients until a dough forms.
  5. Roll the dough into 1½ tablespoon-sized balls and place them on the prepared baking sheets, leaving space in between.
  6. Flatten each dough ball slightly with your palm, then place a pineapple ring on top of each cookie and press gently.
  7. Sprinkle additional sugar over the top of each pineapple ring.
  8. Bake for 12-14 minutes until the edges are golden brown and the centers are set but still soft.
  9. Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
