Preparation Steps
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully combined, until the batter is smooth and thickened.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate this into the wet ingredients until a dough forms.
- Roll the dough into 1½ tablespoon-sized balls and place them on the prepared baking sheets, leaving space in between.
- Flatten each dough ball slightly with your palm, then place a pineapple ring on top of each cookie and press gently.
- Sprinkle additional sugar over the top of each pineapple ring.
- Bake for 12-14 minutes until the edges are golden brown and the centers are set but still soft.
- Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
