Step-by-Step Instructions for Peach Cherry Salsa
  1. Bring a pot of water to a rolling boil. Blanch the peaches for 30 seconds, then transfer to an ice bath, peel and dice into 1/2-inch pieces.
  2. Slice cherries in half to remove pits and add to the bowl with diced peaches.
  3. Mince garlic and finely chop red onion, jalapeño, and cilantro. Add to the bowl with peaches and cherries.
  4. Zest and juice the limes, pour the juice over the mixture and sprinkle with lime zest. Toss gently.
  5. Add a pinch of salt and fold all ingredients together without crushing the fruit.
  6. Cover and refrigerate for at least 15 minutes before serving.
