Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts boneless, skinless
  • 1 cup Parmesan Cheese grated
  • 1 cup Panko Breadcrumbs can substitute with gluten-free breadcrumbs
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Garlic Powder optional
For the Basil Aioli
  • 1 cup Mayonnaise can use dairy-free alternatives
  • 1 cup Fresh Basil chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 tablespoons Olive Oil can use lighter oils

Method
 

Directions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a mixing bowl, combine panko breadcrumbs and grated Parmesan cheese. Add garlic powder if desired.
  4. Press each seasoned chicken breast into the panko and Parmesan mixture to coat.
  5. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown.
  6. Transfer seared chicken to the baking sheet and bake for 20 minutes or until internal temperature reaches 165°F (75°C).
  7. Prepare basil aioli by whisking mayonnaise, chopped basil, minced garlic, and lemon juice until smooth.
  8. Remove chicken from the oven, let it rest for a few minutes, and serve with basil aioli.
