- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season chicken breasts with salt and pepper on both sides.
- In a mixing bowl, combine panko breadcrumbs and grated Parmesan cheese. Add garlic powder if desired.
- Press each seasoned chicken breast into the panko and Parmesan mixture to coat.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown.
- Transfer seared chicken to the baking sheet and bake for 20 minutes or until internal temperature reaches 165°F (75°C).
- Prepare basil aioli by whisking mayonnaise, chopped basil, minced garlic, and lemon juice until smooth.
- Remove chicken from the oven, let it rest for a few minutes, and serve with basil aioli.
