  1. Start by washing and peeling the large russet potatoes. Cut them into thin fries, about ¼ inch thick, to ensure they cook evenly. Soak the cut fries in cold water for 30 minutes to remove excess starch, then drain and pat them dry.
  2. In a large mixing bowl, add the dried fries and drizzle them with olive oil. Sprinkle in garlic powder, onion powder, smoked paprika, salt, and black pepper to taste. Toss together until the fries are evenly coated.
