Step-by-Step Instructions for Healthy Carrot Cake
- Preheat your oven to 350°F (175°C) and grease an 8x8 baking pan with coconut oil, lining the bottom with parchment paper.
- Grate 2-3 large carrots until you have approximately 2 cups and place in a mixing bowl.
- In another bowl, combine 3 large eggs, ½ cup maple syrup, ½ cup melted coconut oil, ½ cup plain Greek yogurt, and 1 tsp vanilla extract, whisk until smooth.
