Step‑by‑Step Instructions for Miso Glazed Eggplant
  1. Preheat your oven to 400°F (200°C).
  2. Cut the eggplant into 1-inch cubes and place them on a baking sheet. Drizzle olive oil and season with salt and pepper, then toss until evenly coated.
  3. Roast the eggplant for 20-25 minutes, flipping halfway through until tender and lightly browned.
  4. In a bowl, whisk together white miso paste, mirin, soy sauce, honey, ginger, and garlic until smooth.
  5. Brush the miso glaze generously over the roasted eggplant cubes.
  6. Return the glazed eggplant to the oven and roast for an additional 5-7 minutes until the glaze bubbles and caramelizes.
  7. Remove from the oven, let it cool slightly, and garnish with sesame seeds and green onions before serving.
