Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine strawberries, blueberries, granulated sugar, cornstarch, cinnamon, and lemon zest. Toss and set aside for 10 minutes.
- Roll out the refrigerated pie crust on a floured surface until 1/8-inch thick, then cut out circles.
- Arrange dough circles on the baking sheet, spoon 1/4 cup of berry mixture into the center of each, leaving an inch border.
- Fold the edges of the dough over the berries, forming pleats where necessary.
- Whisk together the egg and brush the mixture on top of each galette, optionally sprinkle with granulated sugar.
- Bake in the preheated oven for 25-30 minutes until golden brown and filling is bubbling.
- Let galettes cool on the baking sheet for 10 minutes before serving.
