Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine strawberries, blueberries, granulated sugar, cornstarch, cinnamon, and lemon zest. Toss and set aside for 10 minutes.
  3. Roll out the refrigerated pie crust on a floured surface until 1/8-inch thick, then cut out circles.
  4. Arrange dough circles on the baking sheet, spoon 1/4 cup of berry mixture into the center of each, leaving an inch border.
  5. Fold the edges of the dough over the berries, forming pleats where necessary.
  6. Whisk together the egg and brush the mixture on top of each galette, optionally sprinkle with granulated sugar.
  7. Bake in the preheated oven for 25-30 minutes until golden brown and filling is bubbling.
