For the Filling
  • 1 pound Beef Tenderloin Can substitute with sirloin or mushrooms.
  • 8 ounces Mushrooms Finely chopped.
  • 2 tablespoons Dijon Mustard Optional.
For the Finishing Touch
  • 1 large Egg Beaten for wash.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Sauté the finely chopped mushrooms in a skillet over medium heat for about 5-7 minutes.
  3. Roll out the chilled puff pastry on a floured surface to about 1/8 inch thick and cut into 3 inch squares.
  4. Assemble each bite by placing a spoonful of sautéed mushrooms and a piece of beef tenderloin on the pastry square.
  5. Brush edges of the pastry with egg wash, fold over the filling, and seal securely.
  6. Arrange on a nonstick baking sheet and brush tops with remaining egg wash for color.
  7. Bake for approximately 15 minutes until golden-brown and puffed.
  8. Cool slightly, then serve warm on a platter.
