  • 1 teaspoon Garlic Powder Can use fresh minced garlic

Method
 

Directions
  1. Grill fresh corn on medium-high heat for 5-7 minutes until charred, then cool and slice kernels.
  2. Whisk together mayo, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  3. In a large bowl, combine shredded cabbage, grilled corn, red onion, and cilantro. Pour dressing and toss to coat.
  4. Sprinkle cotija cheese over coleslaw and gently mix without breaking vegetables.
  5. Let sit for at least 30 minutes in the refrigerator before serving.
