  • 1 tbsp Dried oregano or thyme Fresh herbs can be used if available.
  • 1 tsp Cracked pepper Optional based on spice preference.
For the Rice Pilaf
  • 1 large Yellow or white onion Chopped.
  • 2 cups Basmati rice Can substitute with jasmine or long-grain rice.
  • 4 cups Chicken broth Vegetable broth for vegetarian version.
For the Salad
  • 1 large Cucumber Diced.
  • 2 large Roma or beefsteak tomatoes Diced; cherry tomatoes can also be used.
  • 1/4 cup Mint or parsley Chopped; switch according to preference.

Method
 

Chicken Skewers

Add the chicken to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, or up to 24 hours for maximum flavor.
  2. Preheat your grill to medium-high heat, about 375°F to 450°F. Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking. Place the skewers on the grill and cook for 5-7 minutes on each side, or until the chicken is golden brown and the internal temperature reaches 165°F. Remove the skewers from the grill and let them rest while you prepare the rice.
Rice Pilaf

Salad
